Easy peasy-Gnocchi

When you start living on your own no one tells you to eat your veggies because they too are eating rice for the third meal today. When you get tired of preparing the only two meals you know how to make, then it is time to learn new easy recipes.

Sweet potato gnocchi with spinach

The recipe may sound complicated but it will take you up to an hour to make this delicious meal. It is a simple recipe which doesn’t require you to have any previous knowledge and it’s a perfect comfort food.

You can make this meal for as little as 0.73€ per person.


2 sweet potatoes
2 cup of flour
2 eggs

Spinach sauce:
1 cup of frozen spinach
1/2 cup Cooking creme
seasonings of your own preference



1)Peel the sweet potato and cut it into pieces that are roughly the same size. TIP: Small pieces will cook faster

2) Cook the sweet potato, it is done when you can easily break it with a fork

3) Pour the water out and put the sweet potato in a bowl, using a fork mash the sweet potatoes

4) Add an egg and salt and mix it together until it is well combined and almost completely smooth and then add 1/4 of a cup at a time and mix it in until you get a smooth dough

5) Transfer the dough to a clean surface which has been sprinkled with flour (so it doesn’t stick), cut the dough into smaller pieces and make small loafs which you cut Into gnocchi of your own size preference

6) Put water to boil, add a bit of salt and oil

7) When the water is boiling, add the gnocchi

8) The gnocchi are done when they start floating up, when that happens you should transfer them into a bowl and sprinkle them with a bit of oil. That will prevent them from sticking together while you work on the spinach sauce. If you leave them in the water for too long, they will become too gooey

Spinach sauce:

1)Put the spinach in the pan and stir it until it is melted

2) Add the cooking creme

3) Add salt seasonings of your own preference

4) Combine the spinach sauce with the gnocchi

TIP: if you leave the spinach sauce aside for later, do not reheat it because it makes spinach toxic
